Why are vegetables different colours?

Why are vegetables different colours? I have absolutely no idea. At first I thought maybe how they’re formed makes a difference, for example, if they’re formed underground or not, but potatoes are white and beetroot is red and they’re both underground. Maybe its their form? Yet again carrots are orange and cucumbers are green. How about layers? Some onions are white and beetroot is red. Peas are green and corn is yellow and they’re the same size. Maybe they’re different colours for the simple reason that they look better in a salad!
